Anyone have a favorite cool/cold summertime food?

Where I live, it's been in the 90s during the day and it's now 9pm, the sun has only been down a few minutes and it's still 85¤. I've been having chicken BLT salads with avocado dressing. So yummy after a long hot day at work. What is your cool summer food?

I've been going overboard on the ice tea lol. Good loose leaf, cold brewed in the fridge, and then in a thermos to keep it cold all day. My building at work has been obscenely hot and I work on my feet, so it helps!

Freeze pops? Lol they’re called otter pops in Arizona :) there the little tubes of flavored ice that you can buy in boxes of 100 or something, stick them in your freezer and keep kids happy forever on hot days

@Natalya :)) My girls freeze them, then take them out cut the tops off, let them thaw completely, and then drink the cold juice. Why they don't just stick them in the fridge I have no idea!

@Nikkel666 That's what those are?!? I've heard them mentioned a thousand times and never knew. I'm from Minnesota, so we call them freezie pops.

Yes, @buttrflyfreefall freezie pops! I'm also from Minnesota. I feel like I always had kind of an understanding that they didn't really have a name though

@Natalya1917 Exactly! I think it came from the brand name when I was a little kid. It was something on the lines of Mr. Freezie, I believe. But that was AGES ago. Lol.

I'm from the west coast, I always called them Otter Pops :D

As for cold food... it's a struggle for me. I like hot dishes infinitely more. I recently made a salad with oranges, berries, feta cheese, walnuts, and vinaigrette and it was delicious. I also sometimes do a caprese salad with tomatoes, mozzarella, grilled chicken, basil, and avocado (which I can find decent ones in my small town store :/) with balsamic vinaigrette. That's a big favorite of mine!

I also love tuna sandwiches... but I know not everyone does :) Weirdly, it's the only type of sandwich I'm super into. Normal deli meat is eh to me.

I make a really yummy 'salad' with chopped up tomatoes and cucumbers, with Italian salad dumped on top.

My favorite summer salad is one I made up that I call BLT salad, except it is Bacon, Leeks, and Tomatos with some macaroni shells. Mix it up with some mayonaise, salt, and pepper. It is SUPER yummy

@Natalya1917 oh yes! I love some ice tea when I get home. I know exactly what you mean, I work the same kinda day. 12-14hrs on your feet, insanly hot where after 30mins you need to ring your clothes out. Along with you and @butterflyfreefall I'm from the Midwest too ( Illinois ) and it's always been freezie pops. There was a Mr. Freeze brand that had a snowman on it I think? Big white and blue box, had regular or tropical flavors. Does that sound right?

@FlyingTurkeyFarm oh those salads sound delicious.

@Confluence that sounds yummy. I've done something like your BLT salad except i used the spiral pasta and ranch. I think im gonna try your version too.

I like homemade pasta salad: pasta with chicken, cucumbers, broccoli, asparagus, sundried tomatoes, capers, water chestnuts, bamboo shoots, olive oil, herbs, salt and pepper. Yum, now I need to hit the grocery store!

@Butterflyfreefall awesome! Glad I know type you meant. Weird thing, I still randomly see the Mr.Freeze brand around my town, not very often, just enough to kick in the nastalgia and make me want to get some for my son and nephew lol.

It's basically a yogurt based soup with pureed cucumber, seasoning and spice added in. Dill is generally used, some others. Salt, pepper. There are various recipes for the soup, and it's always served chilled.
