Drunken Orange Turkey

Ok guys a recipe: Languishing in my cupboard was a big bottle of Grand Marnier for years, so one Thanksgiving I decided to cook with it. So what you do is prep the Turkey, (if you can marinate it in OJ do so) but slide between the flesh and skin, butter, rosemary sprigs and lots of Orange Slices. Salt, pepper, and poultry spice as normal. Pack the insides with sliced oranges and stuffing you have added Grand Marnier to. Now bake as usual But you are going to baste the Turkey every now and then with Grand Marnier mixed with Turkey Juices. Prepare in a sauce pan an Orange Marmalade and Grand Marnier mixture, this is what you will glaze the Turkey with the last 15 minute of the roasting just like you do with whole chickens. Simmer this sauce so you can serve it as extra topping as well. Make a stuffing but add Grand Marnier to it and bake that. I served this with a Cranberry Sauce I dosed with dark rum, and various nuts, cinnamon, apples, raisins and dates.
If you don’t like bread based stuffing, a wild rice stuffing with almonds, fruit and Grand Marnier is good too. This works for Chicken, Game Hens and Pheasant as well.
Trust me Orange Turkey is yummy. -
