Not the traditional "thumbprint" cookie, but instead a "sunprint" cookie using native ingredients like sunflower, squash and chokecherry. Recipe provided by the First Nations Development Institute.

Recipe:

Ingredients

2 cups sweet winter squash, cooked and puréed 
2 cups sunflower seeds, finely ground 
1 ½ cup maple syrup 
½ cup avocado or sunflower oil 
2 teaspoons salt 
2 ½ -3 cups gluten-free flour** 
¾ cup chokecherry or other seasonal jam 
1/2-1 cup sunflower seeds for rolling 

** Recipe was made with a blend of wild rice, corn, and cassava flour however, you may substitute any flour or blend of your choice. For direct single flour replacement, cassava is recommended. 
Directions

Preheat oven to 350°F (175°C) and line cookie sheet with parchment paper .
Mix first 4 ingredients together in a large bowl. 
Incrementally mix in flour until desired consistency. 
Scoop into balls approximately 2 Tablespoons. 
Roll half in full or chopped sunflower seeds and place seed side up on cookie sheet. 
Make indent in center of each cookie with thumb or back of small spoon. 
Fill indent with jam of your choice .
Bake 12-14 minutes, until lightly brown on bottom 
Cool and enjoy! 
 
Notes 
Storage: Store cookies in refrigerator, up to one week .
Batter can be pre-made and scooped, simply thaw, add your jam, and bake. 
Variation: Bake with no jam filling, and fill indent with chocolate ganache once cooled.
