First hi everyone. I played years ago before the move, before all the options when only Warmblood & Sport Pony were the options… I couldn’t remember much about the old account, and it’s not recoverable anyway. I may have been laura in the old game, anyway glad to be back, so here is a yummy recipe no measurements as I just throw it together.
Recipe: Shakshuka
Sauté Diced Onion & Bell Pepper in olive oil, add minced garlic, paprika and cumin. When onions translucent add a bunch of chopped up fresh tomatoes and sauté them for a bit. Then add Tomato Sauce, (Red Wine optional), additional herbs & salt, simmer well, then using a spoon create a little space & crack open an egg into it. Depending on how much you are making add as many eggs as needed. Cover and let eggs poach till done to desired consistency in the sauce. Finish with Sprinkle with Feta & fresh parsley. Serve family style and ladle sauce plus one egg onto plate with pita, Nann, or regular bread/toast Or serve on top of rice, noodles, potatoes or my preferred option of fried or baked Polenta (corn mush).
You can do all sorts of variations on this recipe… change the spices, add other veggies like eggplant or squash, add meat like sausage, change the cheese or no cheese. It works fine for breakfast, lunch or dinner. -
Welcome back. My sister makes Shakshuka and puts a dozen containers of it into the freezer so she has an easy nutritious meal at the ready.

I hadn’t thought about freezing it, I should do that. It is a definite thumbs up meal from my family.
